Potatoes are one of my favorite ways to make a weeknight plate feel generous. Cutting them into coins gives every piece a browned edge, and the scallion ranch adds the cool, creamy finish my family expects from a good dip. I make this when dinner needs a simple side that still feels cared for.

- 1 1/2 pounds baby Yukon Gold potatoes
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 3/4 cup plain Greek yogurt
- 2 tablespoons buttermilk
- 2 scallions, finely sliced
- 1 tablespoon chopped fresh dill
- 1 small garlic clove, grated
- 1 tablespoon lemon juice
- 2 tablespoons sliced pickled jalapenos
Instructions
- Heat the oven to 450 F. Bring a pot of salted water to a boil, add the potatoes, and simmer for 8 minutes until just tender.
- Drain the potatoes and let them steam dry for 2 minutes. Slice each potato into 1/2-inch coins.
- Toss the coins with olive oil, salt, and pepper, then arrange them cut-side down on a sheet pan.
- Roast for 12 minutes, flip, and roast for 8 to 10 minutes more until both sides are browned and crisp.
- Whisk the yogurt, buttermilk, scallions, dill, garlic, and lemon juice in a bowl. Season with salt and pepper.
- Spoon the scallion ranch onto a platter, pile the hot potato coins over it, and scatter with pickled jalapenos.
