  1. Heat the oven to 425 F. Brush both sides of the bread with 1 tablespoon olive oil, place on a sheet pan, and toast for 5 minutes per side until crisp.
  2. Heat the remaining oil and butter in a skillet over medium heat. Add the shallot and apple and cook for 4 minutes until tender but not soft.
  3. Stir in the chicken, cream, Dijon, sage, lemon juice, and pepper. Simmer for 4 minutes until the cream lightly coats the chicken.
  4. Taste the filling and add a pinch of salt if needed. Spoon it evenly over the toasted bread.
