- 1 (5 oz) can tuna, drained
- 2 tbsp mayonnaise
- 1 tbsp dill pickle relish
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- 4 slices sourdough or sandwich bread
- 4 slices cheddar or American cheese
- 2 large eggs
- 1 tbsp butter
- Salt and black pepper
Instructions
- In a bowl, mix tuna, mayonnaise, relish, Dijon, and lemon juice. Season with a pinch of salt and pepper.
- Build two sandwiches: bread, cheese, tuna mixture, another slice of cheese, then bread. Lightly butter the outside of each sandwich.
- Heat a skillet over medium. Toast sandwiches 3 to 4 minutes per side, pressing gently, until the bread is golden and the cheese is melted. Move to a plate and keep warm.
- In the same skillet, add a touch more butter if needed. Fry eggs to your liking, aiming for a soft yolk. Season with salt and pepper.
- Open each sandwich and slide one fried egg inside, or set the egg on top if you like it messy. Close gently.
- Slice and serve right away. A few extra pickles on the side are always a good idea.
