An original cocktail built on tamarind, lime, tequila, and the lively contrast of sparkling water.
Story
Theo likes a drink that announces itself before dinner even starts. Tamarind brings the tang, tequila brings the road-trip energy, and the chili-salt rim keeps the whole thing pointed in the right direction. It is bright enough for a hot afternoon but has enough edge for a late-night booth. Keep the sparkling water cold and do not be shy with the lime.

Ingredients
- 2 oz blanco tequila
- 1 oz tamarind concentrate
- 1 oz fresh lime juice
- 1 tbsp agave syrup
- 3 oz chilled sparkling water
- Ice
- Chili powder
- Flaky salt
- Lime wheels, for garnish
Instructions
- Stir the chili powder and flaky salt together on a small plate, then rub a lime wedge around the rims of two glasses.
- Dip the rims into the chili salt and fill the glasses with ice.
- Add the tequila, tamarind concentrate, lime juice, and agave to a cocktail shaker with ice.
- Shake hard for 10 seconds until the mixture is cold and slightly foamy.
- Strain into the prepared glasses and top each one with sparkling water.
- Stir once, garnish with a lime wheel, and serve while the fizz is lively.
Chef Tips
- Tamarind concentrates vary in sweetness, so taste before adding all the agave.
- Use a half rim if you want to choose between salted and unsalted sips.
- For a party pitcher, multiply the shaken mixture and add sparkling water just before serving.
- Swap tequila for mezcal when you want a deeper smoky finish.
Cook's Notes
- Chill the sparkling water before mixing.
- Adjust the agave after tasting your tamarind concentrate.
- Shake the base without sparkling water so the drink stays properly fizzy.
- A wide lime peel adds aroma if you skip the chili rim.
