This is my easy summer coffee treat, using jam as a shortcut so it feels special with almost no effort.
Story
When it is already warm in the morning, I like a coffee that feels like a little reward. This strawberry version is my quick fix, because jam turns into syrup with just a splash of hot water. The oat milk makes it creamy and mellow, and the whole thing comes together before the ice can even think about melting.

Ingredients
- 1/4 cup strawberry jam
- 2 tablespoons hot water
- 1 to 2 teaspoons fresh lemon juice
- 1 shot espresso or 1/2 cup strong brewed coffee, chilled
- 1 cup oat milk
- 1 cup ice
- Pinch of kosher salt
- Optional, 1/4 teaspoon vanilla extract
Instructions
- Stir strawberry jam with hot water until it loosens into a quick syrup.
- Add lemon juice, a tiny pinch of salt, and vanilla if using, then stir again.
- Spoon the strawberry syrup into a tall glass.
- Fill the glass with ice and pour in the espresso or chilled coffee.
- Top with oat milk and stir until the drink turns a soft rosy color.
- Taste and adjust with a little more syrup or coffee, then sip right away.
Chef Tips
- Jam makes an instant syrup with no stovetop time.
- A pinch of salt keeps the drink from tasting flat.
- For a stronger coffee hit, use two shots of espresso.
Cook's Notes
- **Coffee temperature:** Chill the coffee so the ice does not melt instantly.
- **Sweetness:** Start with less syrup, you can always add more.
- **Jam choice:** Strawberry is classic, but raspberry or peach jam also works.
