strawberries with balsamic
Inspired by the classic strawberries and balsamic combo, turned into a quick layered parfait.
Story
I learned the strawberry and balsamic trick from a friend who always had a way of making simple food taste special. It is one of those little upgrades that feels like magic the first time. When I am short on time but want something fresh, I layer it up with yogurt and crunch. Two glasses, two spoons, and suddenly the afternoon feels softer.

Ingredients
- 2 cups strawberries, sliced
- 2 tsp balsamic vinegar
- 1 tsp honey
- 1 1/2 cups plain Greek yogurt
- 1/2 tsp vanilla extract
- Pinch of kosher salt
- 1/2 cup granola
- 2 tbsp chopped toasted almonds
- 1 tsp lemon zest
Instructions
- Toss strawberries with balsamic and honey, let sit 10 minutes.
- Stir yogurt with vanilla, salt, and lemon zest.
- Spoon a little yogurt into two glasses or bowls.
- Add a layer of strawberries and their juices.
- Top with granola and almonds.
- Finish with another spoon of strawberries and serve right away.
Chef Tips
- Use thick Greek yogurt so the layers stay pretty.
- Add granola at the last second so it stays crunchy.
- Any berries work, keep the balsamic light so it does not dominate.
Cook's Notes
- Keep the balsamic to a teaspoon or two, it should lift the berries, not take over.
- Let the berries sit briefly to make their own syrup.
- Assemble right before eating so the granola stays crisp.
