This is my favorite kind of weeknight cooking, one pot doing the work while you set the table. The tomato paste toasts into something almost jammy, and the coconut milk makes the rice taste like it has been simmering all day. Then you crack a crispy-edged egg on top and it turns into a sauce of its own. It is spicy, creamy, and weirdly comforting.

  1. Build the base: heat oil in a pot over medium. Cook onion until soft, 3 to 4 minutes, then stir in garlic for 30 seconds.
  2. Toast the tomato: stir in tomato paste and crushed red pepper, cook until the paste darkens slightly and smells sweet, about 1 minute.
  3. Add rice and liquids: stir in rinsed rice, then add coconut milk, water, and salt. Bring to a gentle boil.
  4. Simmer: cover, reduce heat to low, and cook 15 minutes. Turn off heat and let stand 5 minutes.
  5. Fry the eggs: in a skillet over medium-high, fry eggs in a little oil until whites are set and edges are crisp. Season with a pinch of salt.
  6. Finish and serve: fluff rice, stir in lime juice, then bowl it up and top each serving with a crispy egg and herbs if you like.
