  1. Put cucumbers, carrot, and scallions in a large bowl.
  2. In a small bowl, whisk peanut butter, soy sauce, rice vinegar, lime juice, honey, and sesame oil until smooth.
  3. Stir in chili crisp a little at a time until it tastes right to you.
  4. Pour dressing over the vegetables and toss until coated.
  5. Fold in most of the peanuts, saving a pinch for the top.
  6. Serve immediately for max crunch, or chill 10 minutes and toss again before serving.
