Story
We had people over for a backyard cookout the Saturday before the Fourth, the kind where everybody says they're not hungry and then eats four hot dogs. I'd promised my friend Dana a spicy margarita because she'd had one somewhere and wouldn't stop talking about it. I had reposado, a bag of limes, and exactly one jalapeño from the garden that the squirrels hadn't gotten to. The first batch I made was a mistake I want to save you from. I muddled the whole jalapeño, seeds and all, then let the shaker sit while I went to flip the burgers. By the time I came back it had turned into something closer to a punishment than a drink. Dana took one sip and made a face I'd never seen her make. So here's the real lesson: the heat keeps building the whole time the pepper sits in the booze. Four slices, muddle gently, shake right away. If you want it hotter, leave the seeds in. If you've got kids running around and want something everyone can sip, take the seeds out and use three slices. The Tajín rim is non-negotiable for me now. I used to just use salt, but Tajín has lime and chili already in it, so every sip starts with a little hit of that before the tequila even lands. I keep a bottle in the cabinet next to the regular salt. I rub a cut lime around the glass and dip it on a plate so the rim is even. I also learned to use real lime juice and nothing else. Ingredients
- 4 oz reposado tequila
- 2 oz fresh lime juice
- 1 oz orange liqueur (Cointreau or triple sec)
- 0.75 oz agave syrup
- 6 slices fresh jalapeño
- 1 tbsp Tajín
- 1 tsp flaky salt
- 2 cups ice
- 1 lime wedge, for rim and garnish
Instructions
- Mix the Tajín and flaky salt on a small plate. Rub a lime wedge around the rim of two glasses, then dip the rims in the mix.
- Drop 4 jalapeño slices into a shaker and muddle a few times to release the heat. Don't pulverize them.
- Add the tequila, lime juice, orange liqueur, and agave to the shaker. Fill with ice.
- Shake hard for 15 seconds until the shaker is frosty.
- Fill the rimmed glasses with fresh ice and strain the margarita over the top.
- Garnish each with a lime wheel and a floating jalapeño slice. Taste and add a splash more agave if too tart.
Chef Tips
- The heat comes from how long the jalapeño sits in the shaker, so muddle and shake right away for mild, or let the slices sit in the tequila for a few extra minutes before shaking if you want it hotter. Always taste before pouring; jalapeños vary wildly.
