  1. Cook udon according to package directions, drain, and toss with a tiny bit of oil.
  2. Season beef with salt. Sear in a hot skillet 2 minutes, then remove.
  3. Add broccoli with a splash of water, cover 2 minutes to steam-crisp.
  4. Stir in garlic and ginger, cook 30 seconds, then add soy sauce, sugar, vinegar, and sesame oil.
  5. Return beef, add cornstarch slurry, simmer 1 minute until glossy.
  6. Toss in udon, coat well, top with scallions and sesame seeds.
