Story

Salmon nights used to feel like a project until I leaned into the sheet pan. Broccoli gets those crisp edges while you mix a tiny bowl of glaze, and then dinner basically takes care of itself. I like how the sesame makes the kitchen smell warm and toasty. It is a calm kind of confidence on a busy night.

  1. Heat oven to 425°F and line a sheet pan.
  2. Toss broccoli with oil, salt, and pepper, roast 8 minutes.
  3. Whisk soy sauce, honey, vinegar, sesame oil, garlic, and seeds.
  4. Push broccoli aside and add salmon to the pan.
  5. Brush salmon with glaze and roast 10 minutes until just cooked.
  6. Brush once more, serve salmon with broccoli and any pan juices.
