- 1 lb Yukon Gold potatoes, diced small
- 2 tbsp olive oil
- 1/2 tsp kosher salt, plus more to taste
- 1/2 tsp smoked paprika
- 1/2 tsp ground cumin
- 1 small onion, finely chopped
- 1 small poblano pepper (or bell pepper), diced
- 8 large eggs
- 2 tbsp milk or cream
- 8 small flour or corn tortillas
- 1/2 cup shredded cheddar or Monterey Jack
- Salsa or hot sauce, lime wedges, cilantro (for serving)
Instructions
- Heat a large skillet over medium-high heat. Add olive oil and diced potatoes, then season with salt, smoked paprika, and cumin.
- Cook potatoes 12 to 15 minutes, stirring occasionally, until browned and tender. If they stick, add a splash of water and scrape up the bits.
- Add onion and poblano to the skillet. Cook 3 to 4 minutes until softened and fragrant.
- In a bowl, whisk eggs with milk and a pinch of salt. Push the potato mixture to one side of the skillet and lower heat to medium.
- Pour eggs into the open side and gently scramble until just set, 2 to 3 minutes. Fold eggs into the potatoes and taste for seasoning.
- Warm tortillas. Fill with egg-potato mix, top with cheese, salsa, cilantro, and a squeeze of lime.
