Inspired by Nordic open-face sandwiches and the sharp garnishes served with smoked fish. The bite-size rye format is an original party shortcut.
Story
Theo wanted a bar bite with enough attitude to stand next to a cold drink. Smoked trout brings the savory depth, horseradish cuts through the cream, and pickled onion gives the whole thing a bright snap. Stack them on a tray and let people grab one before the next song starts.

Ingredients
- 1/2 small red onion, thinly sliced
- 1/4 cup apple cider vinegar
- 1 teaspoon honey
- 1/4 teaspoon kosher salt
- 1/3 cup cream cheese, softened
- 1 tablespoon prepared horseradish
- 1 teaspoon lemon zest
- 12 small slices rye bread
- 6 ounces smoked trout, flaked
- 2 tablespoons chopped fresh dill
- 1 tablespoon capers, drained
Instructions
- Toss the red onion with vinegar, honey, and salt in a small bowl, then let it stand for at least 10 minutes.
- Heat the oven to 400°F and arrange the rye slices on a baking sheet.
- Toast the rye for 5 to 6 minutes until the edges are crisp but the centers still have some chew.
- Stir the cream cheese, horseradish, and lemon zest together until smooth and easy to spread.
- Spread each toast with the horseradish mixture and top with flakes of smoked trout.
- Finish with drained pickled onion, dill, and capers, then serve while the rye is crisp.
Chef Tips
- Slice the onion very thinly so it softens quickly in the vinegar.
- Toast the rye shortly before serving to keep the bases crisp.
- Use hot-smoked trout for a flaky texture or cold-smoked trout for a silkier bite.
- Drain the onion well before topping so the cream cheese does not get watery.
Cook's Notes
- Give the onion at least 10 minutes to soften and brighten.
- Toast the rye until crisp at the edges but not brittle.
- Drain the onion before topping so the bites stay sturdy.
