- 1 lb Yukon Gold potatoes, cut into 1/2-inch cubes
- 2 tbsp olive oil
- 1 red bell pepper, diced
- 1/2 yellow onion, diced
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 3/4 tsp kosher salt
- 4 large eggs
- 2 tbsp chopped parsley
- 2 tbsp chopped chives
- 1/4 cup crumbled feta
- Hot sauce and black pepper, for serving
Instructions
- Microwave the potato cubes with 1 tablespoon water in a covered bowl for 4 minutes, then drain well.
- Heat the olive oil in a large skillet over medium-high heat and cook the potatoes for 6 minutes until browned at the edges.
- Add the pepper, onion, paprika, garlic powder, salt, and black pepper, then cook for 4 minutes until the vegetables soften.
- Make four wells in the hash and crack an egg into each one.
- Cover the skillet and cook for 3 to 4 minutes, until the whites set and the yolks remain softly runny.
- Scatter the herbs and feta over the skillet, then serve with hot sauce at the table.
