Instructions
- Wrap the grated zucchini in a clean towel and squeeze firmly until most of the liquid is gone.
- Whisk the flour, baking powder, and salt in a large bowl, then make a well in the center.
- Whisk the eggs, ricotta, Parmesan, scallions, dill, and olive oil in a second bowl until smooth.
- Pour the wet mixture into the dry ingredients, fold in the zucchini, and stop mixing as soon as the batter comes together.
- Heat a lightly oiled waffle iron, add enough batter to cover the plates, and cook for 3 to 4 minutes until crisp and golden; repeat with the remaining batter.
