Story
Casey likes a breakfast that can use what is already in the fridge. Chicken and apple bring the sweet-savory contrast, couscous makes the skillet feel substantial, and a soft egg pulls it all together. It is cheerful enough for a weekend but easy enough for a Tuesday.

Ingredients
- 1 cup cooked pearl couscous
- 6 ounces cooked chicken breast, chopped
- 1 small crisp apple, diced
- 2 scallions, sliced
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- 2 large eggs
- 1/3 cup plain Greek yogurt
- 1 teaspoon lemon juice
- 2 tablespoons chopped parsley
Instructions
- Stir the yogurt with the lemon juice, a pinch of salt, and black pepper, then set it aside.
- Warm the olive oil in a skillet over medium heat and cook the scallions and apple for 3 minutes.
- Add the chicken, couscous, smoked paprika, and 2 tablespoons of water, then toss until hot.
- Push the couscous mixture to one side of the skillet and crack the eggs into the open space.
- Cover and cook until the whites are set and the yolks are still soft, about 4 minutes.
- Spoon the yogurt over the couscous, top with the eggs and parsley, and serve warm.
Chef Tips
- Use leftover roast chicken or a store-bought rotisserie chicken to keep this especially quick.
- Choose an apple that stays crisp when warmed, such as Honeycrisp or Pink Lady.
- For firmer yolks, cover the skillet for an extra minute.
- Pearl couscous can be swapped for cooked farro or rice.
Cook's Notes
- **Chicken:** Use cooked chicken and cut it into small pieces so it warms quickly.
- **Eggs:** Keep the lid on for soft whites and runny yolks.
- **Apple:** Add it early so the edges soften while the center stays crisp.
