Story

This is the tray I want when the game is on and nobody has agreed whether we are eating dinner. It has the salty sausage, the melted cheese, and just enough pepperoncini snap to keep you reaching back in. Focaccia gives it the road-trip sandwich feel, but the oven does the work at home. Cut it small for sharing, or claim the corner piece and call it a meal.

  1. Heat the oven to 425 F and line a sheet pan with parchment.
  2. Cook the sausage in a skillet over medium-high heat for 5 minutes, breaking it into small pieces.
  3. Add the oil, peppers, onion, oregano, and pepper, then cook for 5 minutes until the vegetables are tender and the sausage is browned.
  4. Spread marinara over the cut side of the focaccia and layer on the sausage mixture, provolone, and pepperoncini.
  5. Close the focaccia, brush the top lightly with butter, and bake for 8 minutes until crisp and melted.
  6. Scatter parsley over the warm sandwich, cut into six pieces, and serve with extra marinara for dipping.
