An original no-bake dessert that balances ripe summer fruit, tangy yogurt, and a salted honey finish.
Story
Casey makes these when the fruit is too good to hide under a complicated dessert. Tangy yogurt gives the peaches a cool, creamy landing place, and the oat crunch adds just enough buttery texture. A few flakes of salt make the honey taste even more like itself. The little glasses look festive, but the whole thing stays wonderfully unfussy.

Ingredients
- 1 cup old-fashioned rolled oats
- 2 tbsp unsalted butter
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1/4 tsp kosher salt
- 2 cups plain Greek yogurt
- 3 tbsp honey, plus more for drizzling
- 1 tsp vanilla extract
- 3 ripe peaches, diced
- 1 tbsp lemon juice
- Flaky sea salt, for finishing
Instructions
- Melt butter in a small skillet over medium heat, then add oats, brown sugar, cinnamon, and kosher salt.
- Cook the oat mixture, stirring often, until toasted and clumpy, 4 to 5 minutes, then spread it on a plate to cool.
- Stir yogurt with honey and vanilla until smooth and lightly sweetened.
- Toss the peaches with lemon juice and let them stand for 5 minutes so their juices collect.
- Layer yogurt, peaches, and cooled oat crunch in six small glasses or jars.
- Drizzle each cup with honey and finish with a few flakes of sea salt before serving or chilling.
Chef Tips
- Cool the oat crunch completely before layering so it stays crisp.
- Use nectarines or ripe plums when peaches are not available.
- For a make-ahead dessert, keep the crunch separate until serving.
- Taste the fruit before adding extra honey because ripe peaches vary in sweetness.
Cook's Notes
- Use thick Greek yogurt so the layers stay distinct.
- Keep the oat crunch in an airtight container for up to 3 days.
- Add the final drizzle right before serving for the prettiest finish.
- If the peaches are very juicy, drain a spoonful of liquid before layering.
