  1. Bring a small pot of water to a gentle boil. Add eggs and simmer 7 minutes for jammy yolks, then chill in cold water and peel.
  2. Warm the rice in a microwave or small skillet until hot.
  3. Warm salsa verde, beans, and corn together in a small pan just until heated through. Season with a pinch of salt.
  4. Divide rice among bowls and spoon the salsa verde mixture over the top.
  5. Halve the eggs and add to each bowl. Top with avocado, cotija, lime juice, and cilantro.
  6. Finish with pickled jalapeños if you like, and eat while everything is warm.
