An original highball pairing tart grapefruit, rosemary syrup, gin, and lively soda.
Story
Theo likes a tall drink that comes out bright and cold with no unnecessary detour. Grapefruit brings the tang, rosemary brings the aroma, and a hard pour of soda makes the whole glass fizz like a roadside sign at dusk. It is clean, loaded with citrus, and easy to stack up for a crowd.

- 2 tablespoons water
- 1 small rosemary sprig
- 4 ounces gin
- 3 ounces fresh grapefruit juice
- 1 ounce fresh lime juice
- Ice
- 4 ounces chilled club soda
- Grapefruit wedges and rosemary sprigs, for serving
Instructions
- Warm the sugar, water, and rosemary in a small saucepan over medium heat, stirring until the sugar dissolves; cool for 3 minutes.
- Fill two tall glasses with ice and divide the gin, grapefruit juice, lime juice, and rosemary syrup between them.
- Stir each glass gently for 10 seconds to chill and combine the citrus with the gin.
- Top each drink with 2 ounces of club soda, pouring slowly to keep the bubbles lively.
- Taste and add a small splash more grapefruit juice if you want a softer, fruitier finish.
- Garnish with grapefruit wedges and rosemary sprigs, then serve immediately while cold and fizzy.
Chef Tips
- Rub the rosemary sprig between your fingers before adding it to the syrup.
- Use freshly squeezed grapefruit juice for the cleanest flavor.
- Chill the club soda before building the drinks.
- For a sweeter fizz, add another teaspoon of rosemary syrup per glass.
Cook's Notes
- Cool syrup before mixing.
- Use cold soda.
- Build over plenty of ice.
