This side borrows the warm-cool contrast of a mezze plate and gives spring radishes a quick, caramelized turn in the oven.

Story

Casey first made this when a bunch of radishes looked too pretty to hide in a salad. The oven softens their peppery edge and brings out a gentle sweetness, while the pistachio crumble keeps the plate lively. Yogurt underneath makes the whole thing feel generous. It is a side dish with enough color to wake up the rest of dinner.

Instructions

  1. Heat the oven to 450 F and toss the radishes with olive oil, salt, and pepper on a rimmed baking sheet.
  2. Roast the radishes cut-side down for 10 minutes, until the bottoms are browned and the centers are tender.
  3. Stir the pistachios, panko, garlic, and olive oil in a small bowl until the crumbs are evenly coated.
  4. Push the radishes to one side of the sheet and scatter the pistachio mixture on the open side.
  5. Roast for 4 to 5 minutes, watching closely, until the crumble is golden and the radishes are glazed at the edges.
  6. Stir the lemon zest, parsley, and mint into the crumble, then serve the radishes over yogurt.
