- 1 small garlic clove, finely grated
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 2 tablespoons chopped parsley
- 1 tablespoon chopped mint
- 1/2 cup plain Greek yogurt
Instructions
- Heat the oven to 450 F and toss the radishes with olive oil, salt, and pepper on a rimmed baking sheet.
- Roast the radishes cut-side down for 10 minutes, until the bottoms are browned and the centers are tender.
- Stir the pistachios, panko, garlic, and olive oil in a small bowl until the crumbs are evenly coated.
- Push the radishes to one side of the sheet and scatter the pistachio mixture on the open side.
