INSPIRED BY
Inspired by strawberry shortcake, turned into a quick layered yogurt dessert with a warm fruit layer.
Story
This is the dessert I make when I want something sweet without baking a whole thing. The strawberries get saucy fast, and the yogurt keeps it bright and not too heavy. I like serving it a little warm so it smells like summer right away.

Ingredients
- 2 cups sliced strawberries (fresh or thawed frozen)
- 2 tbsp sugar
- 1 tsp lemon juice
- 1/2 tsp vanilla extract
- 1 cup plain Greek yogurt
- 2 tbsp honey
- 3/4 cup rolled oats
- 2 tbsp brown sugar
- 3 tbsp butter, melted
- Pinch of kosher salt
Instructions
- Stir strawberries with sugar and lemon juice in a skillet.
- Cook 6 to 8 minutes until juicy and slightly jammy, then stir in vanilla.
- Mix yogurt with honey and a pinch of salt.
- Stir oats, brown sugar, melted butter, and a pinch of salt until crumbly.
- Spoon strawberries into cups, add yogurt, then sprinkle crumble on top.
- Serve warm-right-now, or chill 15 minutes for a firmer set.
Chef Tips
- Frozen strawberries work great, just simmer a minute longer.
- For extra crunch, toast the oat crumble in a dry skillet for 2 minutes.
- Swap strawberries for blueberries, peaches, or mixed berries.
Cook's Notes
- If your strawberries are very tart, add an extra teaspoon of sugar.
- Use full-fat yogurt for the creamiest texture.
- The crumble can be made a day ahead, keep it covered at room temp.
