  1. In a bowl or jar, stir together oats, chia seeds, and flaxseed (if using).
  2. Add milk, peanut butter, maple syrup, vanilla, and salt. Stir until the peanut butter is mostly dissolved.
  3. Cover and refrigerate at least 6 hours, or overnight.
  4. In the morning, stir the oats. If they are too thick, add a splash of milk.
  5. Top with sliced banana.
  6. Finish with chopped peanuts or granola for crunch, and eat cold or let sit 5 minutes at room temperature.
