  1. Add peach slices and ginger to a shaker and gently muddle to release juices.
  2. Add mint leaves and lightly press them once or twice, do not pulverize.
  3. Pour in bourbon, lemon juice, and simple syrup.
  4. Fill the shaker with ice and shake hard for about 10 seconds until very cold.
  5. Fill a rocks glass with crushed ice. Double strain the cocktail into the glass.
  6. Garnish with a mint sprig and a peach slice, then serve right away.
