Story
Some nights I want dessert, but I cannot handle turning on the oven. These parfaits are my little shortcut, juicy peaches, cold vanilla yogurt, and a cinnamon crunch that makes it feel like something you would order out. I like building them in jars because everyone gets their own layers. If you can slice a peach, you can make this.

Ingredients
- 3 cups sliced ripe peaches
- 2 cups vanilla Greek yogurt
- 1 tbsp honey
- 1/2 tsp ground cinnamon
- 1 cup crushed buttery cookies or graham crackers
- 2 tbsp melted butter
- 1/2 tsp vanilla extract
- Pinch of salt
Instructions
- Toss the peaches with honey and vanilla, then set aside for 5 minutes.
- In a small bowl, stir crushed cookies with melted butter, cinnamon, and a pinch of salt.
- Spoon a layer of yogurt into four jars or bowls.
- Add a layer of peaches and a sprinkle of the crunchy topping.
- Repeat the layers, finishing with extra crunch on top.
- Serve right away for maximum crunch, or chill up to 2 hours.
Chef Tips
- Use really ripe peaches, they do most of the flavor work.
- If your peaches are not sweet, add another teaspoon of honey.
- Build right before serving if you want the topping extra crisp.
