Story

This spritz is my move when peaches are ripe and I want something light but still packed. You smash the fruit, hit it with lime and rum, then stack it with ice and fizz. It is bright, it is easy, and it drinks like summer on the road.

- 1/2 ripe peach, sliced
- 1 tsp sugar or honey
- 1 oz fresh lime juice
- 2 oz white rum
- 2 to 3 oz club soda
- Ice
- Pinch of salt (optional)
- Lime wheel or peach slice, for garnish (optional)
Instructions
- Add peach slices and sugar to a sturdy highball glass and muddle until the peach is juicy.
- Add lime juice, rum, and a pinch of salt if using. Stir to dissolve the sugar.
- Fill the glass with ice.
- Top with club soda and stir gently once or twice.
- Taste and adjust with a little more lime or sugar if needed.
- Garnish with a lime wheel or peach slice and serve right away.
Chef Tips
- If the peach is not very sweet, use honey instead of sugar and add 1/2 teaspoon more.
