The coconut rice cooks up in one pot, and the mango makes it feel like you planned ahead, even if you did not.   1. Rinse the rice until the water runs mostly clear, then drain well.
  2. In a small pot, combine rice and water, bring to a simmer, cover, and cook on low for 10 minutes.
  3. Stir in coconut milk, brown sugar, and salt. Cover again and cook 12 to 15 minutes, stirring once halfway, until the rice is tender and creamy.
  4. Remove from heat and stir in lime zest and lime juice. Let stand, covered, 5 minutes to thicken.
  5. Spoon warm sticky rice into bowls and top with diced mango.
  6. Finish with toasted coconut and nuts, then serve right away.
