I wanted a wrap that tastes bright and fresh without needing a pile of toppings. The lemon pepper and yogurt sauce do most of the work.

Story

Some nights I need dinner to feel like a reset button, not a project. These wraps are my answer, lots of lemony flavor, a cool sauce, and a little crunch. I like using thighs because they stay juicy even if the pan runs a minute long. Pile it into warm pita and it feels like takeout, only lighter and faster.

  1. Season the chicken with lemon pepper and salt.
  2. Heat olive oil in a large skillet over medium-high heat. Sear chicken 6 to 7 minutes per side, until browned and cooked through.
  3. While chicken cooks, stir together yogurt, mayo, lemon zest, lemon juice, and garlic. Taste and add a pinch of salt if needed.
  4. Toss romaine (or cabbage) and cucumber with 2 tablespoons of the sauce to lightly coat.
  5. Rest chicken 3 minutes, then slice.
  6. Fill warm pitas with sliced chicken and the crunchy salad. Drizzle with more sauce and serve right away.
