- 1/2 cup finely diced English cucumber
- 1/4 cup shredded carrot
- 2 scallions, thinly sliced
- 1 tablespoon rice vinegar

Instructions
- Heat the oven to 375 F and spray a 12-cup muffin tin with oil, then briefly dip each rice paper wrapper in warm water.
- Press two softened wrappers together and nest them into a muffin cup, leaving the edges ruffled, then repeat to make six cups.
- Bake the cups for 8 minutes until crisp and lightly golden, then cool them in the tin for 2 minutes.
- Meanwhile, brown the beef in a skillet over medium-high heat for 4 minutes, breaking it into small crumbles.
- Stir in the soy sauce, brown sugar, sesame oil, ginger, and garlic and cook for 2 minutes until glossy, then remove from the heat.
- Mix the cucumber, carrot, scallions, vinegar, and sesame seeds, fill the cups with beef, and top with the crunchy salad.
