  1. Brown the beef in a large nonstick skillet over medium-high heat for 5 minutes, breaking it into small crumbles, then stir in the cumin, paprika, and salt.
  2. Whisk the eggs with the milk, melt the butter in a second skillet over medium heat, and scramble the eggs for 3 minutes until softly set.
  3. Lay the tortillas flat and divide the cheese, beef, eggs, green chiles, and onion over one half of each tortilla.
  4. Fold the tortillas over the filling and heat a clean skillet over medium, working in batches if needed.
