This original spritz pairs the peppery edge of rye with grapefruit and a piney rosemary lift.
Story
Theo likes a drink that pulls into the parking lot with the windows down. Grapefruit brings the sharp citrus, rye keeps the finish lively, and rosemary gives the whole glass a little roadside garden energy. Add the bubbles last and let the color do the talking.

Ingredients
- 1 1/2 ounces rye whiskey
- 2 ounces fresh ruby grapefruit juice
- 1/2 ounce fresh lemon juice
- 1/2 ounce rosemary simple syrup
- 3 ounces chilled sparkling water
- Ice
- 1 rosemary sprig
- 1 grapefruit wedge
Instructions
- Add the rosemary syrup and lemon juice to a tall glass, then press the rosemary sprig gently against the side of the glass.
- Fill the glass to the top with ice so the drink chills quickly and stays balanced.
- Pour in the rye whiskey and grapefruit juice.
- Stir slowly for 8 seconds to combine the citrus and whiskey without over-diluting the drink.
- Top with chilled sparkling water, pouring down the side of the glass to preserve the bubbles.
- Lift once from the bottom with a bar spoon, garnish with the grapefruit wedge, and serve immediately.
Chef Tips
- Make rosemary syrup by simmering equal parts sugar and water with a rosemary sprig for 3 minutes, then cool and strain.
- Use a very cold grapefruit for the brightest juice.
- Bourbon makes the drink rounder, while gin gives it a more floral finish.
- Add the soda last so the spritz stays lively.
Cook's Notes
- **Syrup:** Cool the rosemary syrup completely before mixing.
- **Ice:** Fill the glass so the drink chills without tasting watery.
- **Bubbles:** Add sparkling water last and stir only once.
