A bright road-trip highball that turns grapefruit and ginger beer into a tall, refreshing pour.
Story
This is a tall-glass number for the kind of night that starts at a diner and ends wherever the highway points. Grapefruit brings the sharp citrus, ginger beer brings the bubbles, and tequila keeps the whole thing moving. It is quick, clean, and stacked with ice. Give it one good stir and let the jukebox do the rest.

Ingredients
- 2 oz blanco tequila
- 2 oz ruby grapefruit juice
- 1/2 oz fresh lime juice
- 1/4 oz agave syrup
- 1 small pinch of kosher salt
- 3 oz chilled ginger beer
- Ice
- Grapefruit wedge and lime wheel
Instructions
- Fill a tall glass three-quarters full with ice.
- Pour in the tequila, grapefruit juice, lime juice, agave syrup, and salt.
- Stir with a bar spoon for 10 seconds so the agave and salt dissolve.
- Add the ginger beer slowly, leaving room for the bubbles to rise.
- Stir once from the bottom without flattening the fizz.
- Garnish with a grapefruit wedge and lime wheel, then serve immediately.
Chef Tips
- Use fresh grapefruit juice when possible for the cleanest citrus flavor.
- If your grapefruit is very tart, add another teaspoon of agave at the end.
- Add ginger beer last so the highball stays lively.
- For a zero-proof version, replace tequila with chilled coconut water and add extra lime.
Cook's Notes
- **Glass:** Use a tall glass with plenty of ice to keep the drink cold.
- **Balance:** Add agave only after tasting the grapefruit.
- **Bubbles:** Pour ginger beer slowly and stir once.
- **Garnish:** A wide grapefruit wedge gives the drink a great aroma.
