I wanted a default side dish that works with almost any dinner. This one is fast, fresh, and uses ingredients I can grab any time.

Story

Casey here, and this is my go-to when the main dish is hot and I need something cold and crunchy to balance it out. It is the salad I make when I do not want to think too hard, but I still want the table to look inviting. The honey in the dressing is tiny, but it rounds out the lemon so the whole bowl tastes bright, not sharp. I almost always make a double batch because it vanishes.

  1. Prep the veg, chop cucumbers, halve tomatoes, and thinly slice the red onion.
  2. Mix the dressing, in a large bowl whisk olive oil, lemon juice, Dijon, honey, oregano, salt, and pepper.
  3. Toss, add cucumbers, tomatoes, and onion to the bowl and toss until glossy.
  4. Add feta, gently fold in feta so it stays in some larger crumbles.
  5. Herbs last, stir in parsley or dill and taste, add more salt or lemon if needed.
  6. Serve, serve right away or chill 10 minutes for a colder, crunchier bite.
