We take canned salmon, smash it up with pickles and mustard, then stack it under cheddar and griddle it hard until the bread goes crisp and the cheese turns molten. Ingredients
- 1 (14.75 oz) can salmon, drained and flaked
- 3 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp finely chopped dill pickles
- 1 tbsp pickle brine
- 1 tbsp minced red onion
- 1 tbsp chopped celery (optional)
- Black pepper
- 4 slices sturdy sandwich bread
- 4 slices cheddar cheese
- 2 tbsp softened butter
Instructions
- In a bowl, smash the salmon with a fork. Stir in mayo, Dijon, pickles, pickle brine, red onion, and celery if using. Season with black pepper.
- Lay out bread slices and top two of them with a slice of cheddar.
- Pile salmon salad on the cheese, then add another slice of cheddar on top. Close with remaining bread slices.
- Butter the outside of each sandwich. Heat a skillet or griddle over medium heat.
- Cook sandwiches until deep golden on the first side, 3 to 4 minutes, pressing lightly. Flip and cook until the cheese is fully melted, 3 to 4 minutes more.
- Rest 1 minute, then slice and serve hot, with extra pickles on the side.
Chef Tips
- For a cleaner melt, use bread that is not too airy, sourdough or thick white works great.
- If your salmon has skin or bones, mash them in for calcium, or pick them out if you prefer.
- Add a few dashes of hot sauce to the salad if you want it louder.
