Instructions
- Place the eggs in a saucepan, cover with cool water, and bring to a gentle boil over medium-high heat.
- Boil for 10 minutes, transfer the eggs to ice water, and cool them for 5 minutes.
- Peel the eggs, halve them lengthwise, and pop the yolks into a small bowl.
- Mash the yolks with mayonnaise, mustard, pickle brine, pickles, hot sauce, and black pepper until smooth.
- Spoon or pipe the filling back into the whites, dividing it evenly among the 12 halves.
- Top with jalapeños, crispy onions, smoked paprika, and scallions, then serve chilled.
