Story

Theo took the patty melt out of the booth and put it on a party tray. The beef gets smashed thin, the rye gets crisp, and the pickles cut through all that melted cheese like a neon sign on the highway. Stack these loaded little toasts and watch them disappear.

  1. Spread the softened butter on one side of each rye slice and mix the mayonnaise and mustard in a small bowl.
  2. Season the ground beef with salt, pepper, and onion powder, then press it into a thin layer in a large skillet over medium-high heat.
  3. Cook the beef for 3 minutes, flip it in sections, and cook for 2 minutes more until browned and cooked through.
  4. Transfer the beef to a cutting board, chop it into small pieces, and toss it with the pickles and scallion.
  5. Melt the remaining butter in the skillet, place the bread butter-side down, top with cheese and beef, and toast for 2 minutes until the bottoms are golden.
  6. Fold or top each toast with a little mustard mayonnaise, cut into pieces, and serve hot.
