This original appetizer turns cheeseburger flavors into crisp, pull-apart biscuit bites. Pickles added after baking keep their snap.
Story
Theo likes a snack that can be eaten with one hand while the other guards the last one. Beef, cheddar, and black pepper give these biscuit bites a proper counter-service swagger. The pickles land at the end with a cold crunch. Put out two plates because one will not survive the first commercial break.

Ingredients
- 8 ounces lean ground beef
- 1/4 cup finely diced yellow onion
- 1 tablespoon ketchup
- 1 teaspoon yellow mustard
- 1/2 teaspoon cracked black pepper
- 1/2 cup shredded sharp cheddar
- 1 tube refrigerated biscuit dough
- 1 tablespoon melted butter
- 2 tablespoons finely chopped dill pickles
- 1 tablespoon sesame seeds
Instructions
- Heat the oven to 400 F and line a baking sheet with parchment.
- Brown the beef and onion in a skillet over medium heat for 5 minutes, breaking the meat into small crumbles.
- Stir in the ketchup, mustard, black pepper, and 1/4 teaspoon salt, then cool for 3 minutes.
- Separate the biscuit dough into 12 pieces, flatten each one, and place a spoonful of beef and a pinch of cheddar in the center.
- Pinch the dough around the filling, place the bites seam-side down, brush with melted butter, and sprinkle with sesame seeds.
- Bake for 10 to 12 minutes until golden, then top with chopped pickles and serve warm.
Chef Tips
- Cool the beef briefly so it does not soften the biscuit dough while you shape the bites.
- Do not overfill the dough or the cheese will escape before the crust sets.
- Use a small cookie scoop for even portions of beef filling.
- Serve with mustard, burger sauce, or warm tomato jam for dipping.
Cook's Notes
- **Filling:** Cook the beef dry enough that the biscuit centers do not turn soggy.
- **Seams:** Pinch firmly and place each bite seam-side down.
- **Serving:** Add pickles after baking for the best contrast.
