Story

If I have carrots in the crisper, this is my favorite way to make them feel like a treat. The smell of Parmesan in a hot oven is basically a dinner bell. I keep the dip simple, and it pulls double duty, it is good on leftover chicken too. Make a double batch if kids are around, they vanish fast.

  1. Heat oven to 425F. Line a sheet pan with parchment.
  2. Toss carrots with olive oil, salt, garlic powder, pepper, cornstarch, and Parmesan until well coated.
  3. Spread carrots in a single layer. Roast 12 minutes.
  4. Flip, then roast 10 more minutes until browned and crisp at the edges.
  5. Stir yogurt with grated garlic, lemon juice, and herbs. Taste and add a pinch of salt if needed.
  6. Serve carrot fries hot with the garlic yogurt dip on the side.
