  1. Place the potatoes in a saucepan, cover with salted water, and simmer for 8 minutes until just tender.
  2. Drain the potatoes well and whisk the Dijon, lemon juice, honey, and 2 tablespoons olive oil in a small bowl.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat and add the potatoes, paprika, and salt.
  4. Cook the potatoes undisturbed for 5 minutes, then turn and brown the other sides for 5 minutes more.
  5. Add the corn and cook for 4 minutes until the kernels are charred and the potatoes are crisp.
  6. Toss the hot skillet with the Dijon dressing, scatter with feta and parsley, and serve immediately.
