I love a breakfast that feels special without asking for a long morning. These tostadas borrow the best parts of huevos rancheros, then add a crackly cornmeal crust so the tortillas stay sturdy under the eggs. The cool avocado and juicy tomatoes make the plate taste fresh, even when everyone is eating between errands.

  1. Heat the oven to 425 F. Brush both sides of the tortillas with olive oil, sprinkle with cornmeal and a pinch of salt, and place on a baking sheet.
  2. Bake the tortillas for 8 to 10 minutes, turning once, until crisp and lightly golden. Warm the black beans in a small saucepan over low heat.
  3. Whisk the eggs, green chiles, cumin, and 1/4 teaspoon salt in a bowl. Melt a little more oil in a nonstick skillet over medium-low heat.
  4. Pour in the eggs and gently fold with a spatula for 3 to 4 minutes, stopping while they are still softly set. Fold in half of the cheddar.
  5. Spread the warm beans over the crisp tortillas and top with the green chile eggs. Sprinkle with the remaining cheddar.
  6. Finish with avocado, tomatoes, and scallions. Serve immediately with lime wedges.
