  1. Make the quick slaw, in a bowl, toss cabbage with mayo (or yogurt), half the lime juice, a pinch of salt, and a little lime zest. Set aside.
  2. Crisp the chickpeas, heat olive oil in a large skillet over medium-high heat. Add chickpeas and cook, stirring occasionally, until blistered and starting to turn crunchy, 8 to 10 minutes.
  3. Season, sprinkle in chili powder, smoked paprika, cumin, and salt. Stir for 30 seconds so the spices toast.
  4. Sauce it up, add tomato paste and stir to coat. Pour in water and simmer 2 to 3 minutes, scraping the pan, until glossy and clinging to the chickpeas.
  5. Finish bright, turn off the heat and stir in remaining lime juice and a little more zest to taste.
  6. Assemble, fill warm tortillas with chickpeas, top with slaw, and add avocado, cheese, or hot sauce if you like.
