  1. Heat the oil in a deep skillet over medium heat and cook the onion for 4 minutes until translucent.
  2. Stir in the garlic, orzo, smoked paprika, and a pinch of salt, coating the pasta in the oil.
  3. Pour in the broth, bring to a simmer, and cook for 10 minutes, stirring often so the orzo does not stick.
  4. Stir in the corn and poblano and cook for 5 minutes more, until the orzo is tender and the corn is hot.
  5. Fold in the cream and half the cotija, then simmer for 1 minute until the sauce looks glossy and loose.
  6. Take the skillet off the heat, stir in the lime juice, and top with cilantro and the remaining cotija.
