- 1 teaspoon smoked paprika
- 1/2 teaspoon ground cumin
- 1 tablespoon olive oil
- 1 small yellow onion, diced
- 2 cups corn kernels, fresh or frozen
- 2 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1/2 cup sour cream
- 1 lime, zested and juiced
- 2 scallions, thinly sliced

Instructions
- Season the chicken with the smoked paprika, cumin, 1/2 teaspoon salt, and a few grinds of black pepper.
- Heat the oil in a large skillet over medium-high heat, add the chicken, and cook for 5 to 6 minutes until browned and cooked through; transfer to a plate.
