  1. Heat the coconut oil in a wide skillet over medium heat and cook the onion for 4 minutes until translucent.
  2. Add the garlic, ginger, and curry powder and stir for 1 minute until fragrant.
  3. Add the potatoes, chickpeas, coconut milk, broth, and 1/2 teaspoon salt, then bring to a gentle simmer.
  4. Cover and cook for 18 minutes, stirring once, until the potatoes are almost tender.
  5. Uncover and simmer for 5 minutes until the broth lightly coats the potatoes, then fold in the spinach.
  6. Stir in the lime juice, scatter over the cilantro, and serve with warm rice or flatbread.
