Built for busy weeknights with pantry staples and bold, clean flavors.
Story
This little mug is for the mornings when you want something comforting but the sink is already full of dishes. I started making it when my kids wanted French toast on a school day and I needed a shortcut. It is warm, cinnamon-y, and honestly feels like a tiny treat that still counts as breakfast.

Ingredients
- 1 large egg
- 1/4 cup milk
- 1 tbsp maple syrup, plus more to serve
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon
- Pinch of salt
- 1 cup bread cubes (about 1 thick slice)
- 1 tsp butter
- 1 tbsp brown sugar (optional)
- Powdered sugar or berries, to top (optional)
Instructions
- Butter a large microwave-safe mug thoroughly.
- Whisk egg, milk, maple syrup, vanilla, cinnamon, and salt in the mug.
- Stir in bread cubes and press lightly so they soak for 1 minute.
- Microwave 60 seconds, then rest 30 seconds.
- Microwave 20 to 40 seconds more until set but still tender in the center.
- Top with more maple syrup and optional powdered sugar or berries, serve warm.
Chef Tips
- Use sturdy bread, very soft sandwich bread can get gummy.
- Every microwave runs different, stop early and add time in short bursts.
- A pinch of salt makes the maple taste brighter.
Cook's Notes
- Pick a mug with extra headroom, it puffs as it cooks.
- Let it rest after the first burst, the center keeps setting.
- If you like a crisp top, use a toaster oven for 1 minute after microwaving.
