Crispy smashed potatoes stand in for chips, then you pile on quick chili and let the cheese do its melty thing. It is loud, stacked, and not trying to be polite.   1. Microwave the potatoes in a covered bowl with 2 tablespoons water for 8 to 10 minutes until tender. Drain well.
  2. Heat oven to 475 F. Spread potatoes on a sheet pan, drizzle with olive oil and salt, then smash each one flat with the bottom of a mug.
  3. Roast 12 minutes, flip, then roast 6 to 8 minutes more until the edges are crisp and browned.
  4. Meanwhile, brown ground beef in a skillet over medium-high heat. Stir in chili powder and cumin.
  5. Add salsa and water, simmer 3 to 4 minutes until saucy. Spoon chili over the crispy potatoes and sprinkle with cheese.
  6. Return pan to the oven 2 minutes to melt, then top with jalapeños, sour cream, and green onions.
