Story
Casey loves a breakfast that feels a little playful but still eats like a real meal. These cups catch the salsa instead of letting it run all over the plate, and the crisp tortilla edges are the best bite. Add avocado at the end so it stays cool and creamy against the warm chicken. Make a batch when the morning needs a little more color.

Ingredients
- 8 small corn tortillas
- 1 tablespoon olive oil
- 2 cups shredded cooked chicken
- 1 cup salsa verde
- 4 large eggs
- 1/2 cup shredded Monterey Jack cheese
- 1/4 teaspoon kosher salt
- 1/4 small red onion, finely diced
- 1/4 cup chopped cilantro
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- Heat the oven to 400 F and brush a 12-cup muffin pan with olive oil.
- Warm the tortillas for 20 seconds, then press one into each of 8 muffin cups, folding the edges into loose pleats.
- Stir the shredded chicken and salsa verde together, then divide the mixture among the tortilla cups.
- Bake for 8 minutes, crack an egg into each cup, and sprinkle with Monterey Jack and salt.
- Bake for 5 to 7 minutes more, until the whites are set and the yolks are still softly jammy.
- Top with red onion, cilantro, and avocado, then serve with lime wedges while the tortilla edges are crisp.
Chef Tips
- Warm the tortillas first so they bend without splitting.
- For firmer yolks, add 2 extra minutes to the final bake.
- Use leftover rotisserie chicken for the fastest prep.
- Let the cups rest for 2 minutes before lifting them from the pan.
Cook's Notes
- Press the tortillas firmly into the muffin cups so the bottoms stay flat.
- Add the eggs only after the first bake to keep the cups crisp.
- Rest the cups briefly before serving so the filling sets.
