  1. Heat the oven to 350 F and melt the butter in a 10-inch ovenproof skillet over medium heat.
  2. Cook the butter for 3 minutes until the milk solids turn amber and smell nutty, then remove from the heat.
  3. Stir oats, flour, brown sugar, cinnamon, baking powder, and salt into the browned butter until crumbly.
  4. Press two-thirds of the oat mixture across the skillet bottom and arrange the peaches over it.
  5. Whisk the egg, vanilla, and lemon juice, drizzle over the peaches, and scatter the remaining oat mixture on top.
  6. Bake for 25 minutes until golden at the edges, cool for 10 minutes, and cut into small bites before serving.
