I like these for mornings when pancakes sound wonderful but the sink says otherwise. The bread cups bake while I make coffee, and the lemony ricotta keeps them soft in the middle. - 8 thin slices brioche or soft white sandwich bread
- 2 tbsp melted unsalted butter
- 1 cup whole-milk ricotta
- 1 large egg
- 2 tbsp honey
- 1 tsp finely grated lemon zest
- 1/2 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 1 tbsp granulated sugar
- Extra honey and lemon zest
Instructions
- Heat the oven to 375°F and brush 8 wells of a muffin pan with some of the melted butter.
- Press one bread slice into each prepared well, overlapping the corners, then brush the tops with the remaining butter.
- Whisk the ricotta, egg, honey, lemon zest, and vanilla in a bowl until smooth.
- Divide the ricotta mixture among the bread cups and scatter the blueberries over the top.
- Bake for 13 to 15 minutes, until the bread is golden and the filling is just set.
- Cool for 5 minutes, lift out the cups, and serve with honey and a little extra lemon zest.
Chef Tips
- Use soft sandwich bread so it bends into the muffin wells without cracking.
- If your ricotta is very wet, drain it for 10 minutes so the filling sets neatly.
- Frozen blueberries work too, no thawing needed, but add 2 minutes to the bake.
