An original Tastelicious highball pairing ripe blackberries and tarragon with bright lemon and crisp soda.
Story
Theo likes a tall drink that looks like it pulled in from the county line with the radio still humming. Blackberries bring the color, tarragon brings the left turn, and soda keeps the whole thing light on its feet. Pour it over plenty of ice and let the afternoon stretch out.

Ingredients
- 6 fresh blackberries
- 1 teaspoon superfine sugar
- 1/2 ounce fresh lemon juice
- 2 ounces London dry gin
- 3 fresh tarragon leaves
- Ice
- 3 ounces chilled club soda
- 1 blackberry and tarragon sprig for garnish
Instructions
- Add the blackberries, sugar, lemon juice, and tarragon leaves to a shaker and muddle gently until juicy.
- Pour in the gin and fill the shaker with ice.
- Shake for 10 seconds to chill and blend the berry mixture.
- Fill a tall glass with fresh ice and double strain the drink into it.
- Top slowly with the club soda and stir once from the bottom up.
- Garnish with a blackberry and tarragon sprig, then serve immediately.
Chef Tips
- Muddle gently so the tarragon releases aroma without turning bitter.
- Double strain for a cleaner drink or use one strainer for extra berry texture.
- Chill the soda before building the drink so it stays lively.
- Use vodka for a softer, less botanical variation.
Cook's Notes
- **Berries:** Muddle just enough to release juice.
- **Straining:** Double strain for a polished pour.
- **Soda:** Add it last and stir once to keep the fizz.
